Our honey is minimally processed, without heat and gently strained but never filtered.
Various things make honey what it is – as opposed to concentrated sugar water. The dehydration process performed by the honey bees, enzymes provided by the bees, the nectar source, the nectar itself and the pollen that gets mixed in the nectar while on the flower and while being handled by the bees.
We wish to remove wax and other hive products from the honey but we want to provide you with pure, raw honey as the bees intended the honey to be. Whidbey Island honey produced by bees and flowers on Whidbey Island.
